You’ll Need:
1/4 cup dried beef, cut up
2 hard boiled eggs, diced
1 cup uncooked macaroni
1 can (10 3/4oz) condensed cream of mushroom soup
1 cup milk
8 oz grated sharp Cheddar cheese
2 tbs grated onion
Combine all ingredients. Pour into a greased 1 1/2 to 2 quart casserole dish. Cover and chill 3 hours or overnight. Bake uncovered at 350 F. for 30 minutes.
Directions : Rich’s Note: When I was seven or eight, my mother took me in to Philly to see a movie called the Vikings. Oh, it was great. Kirk Douglas and Tony Curtis and Ernest Borgnine hamming it up on the big screen. Ill never forget the part where the hunting bird gouges out Kirk Douglas eye. My mother was pretty impressed by that too. In fact, that scene was in her mind a few weeks later. What happened was that I was playing with my grandmothers boyfriend. He always had a racing sheet and a pencil in his shirt pocket. He beckoned me over. I went. He jabbed me in the ribs which caused me to bend over double. Pencil in pocket, point up. Pencil in eye. I heard the crunch as the point broke off in my eye. I stood up, too scared to scream, thinking of Kirk Douglas as I covered my eye with my hand. My mother came running into the room and saw me with my hand over my eye, blood running between my fingers. Unlike me she wasnt too scared to scream. But mothers are wonderful in emergencies. She picked me up and started out the door. We were less than a mile from Our Lady of Lourdes Hospital, but we had no car and no phone. She ran down Haddon Avenue, in the middle of the street, until a car stopped to take us the rest of the way. Well, it wasnt as bad as feared, the pencil point missed my eyeball by an eighth of an inch. But I got to wear an eye patch like Kirk Douglas for a couple of weeks
