You’ll Need:
1 green pepper, cut into strips
1 medium onion, chopped
2 cups sliced, fresh mushrooms
2 oz pepperoni, sliced thin
1/2 cup white wine
2 tbs olive oil
2 tsp Italian seasoning
12 oz uncooked rotini pasta
1 1/2 cups shredded Mozzarella cheese
1 jar (32oz) commercial spaghetti sauce
1/4 cup freshly grated Romano cheese
Directions : Combine green pepper, onion, mushrooms, and pepperoni in large bowl. Add wine, olive oil, and Italian seasoning; toss gently. Marinate mixture at room temperature one hour. Cook rotini according to package directions, omitting salt; drain. Add to marinated vegetable mixture; stir in Mozzarella cheese, tossing gently. Spoon pasta mixture into a lightly greased 13- x 9- x 2-inch baking dish. Pour spaghetti sauce over pasta, completely covering it. Cover and bake at 350? F. for 25 minutes. Sprinkle with Romano cheese; bake an additional 5 minutes
