You’ll Need:
1/4 cup butter or margarine
2 cups finely chopped onion
3 lbs baking potatoes
1/2 cup sour cream
3/4 cup orange juice
1 tsp salt
Orange zest for garnish
Directions : Melt butter in large skillet over medium-high heat; add onion and cook, stirring constantly, until browned. Set aside. Peel potatoes; cut into fourths. Cook potatoes in boiling water to cover 15 minutes or until potato is tender; drain. Beat potato, sour cream, and orange juice at medium speed with an electric mixer until mixture is fluffy. Stir in onion and salt. Garnish, if desired
