You’ll Need:
# 12oz (350g) cooked chicken divided into small pieces
# 3 medium onions, thinly sliced
# 6 tbsps. chicken stock
# 12oz. (350g) cooked potatoes
# oil for frying
# salt and pepper
Directions : # Heat the oil in a large pan, add the onions and fry until tender
# Add the chicken pieces to the potatoes and mash them together
# Blend chicken stock in to the mash until it is creamy then add salt and pepper to taste
# Add the mash to the onions in the pan and flatten the top of the mixture
# Fry the mixture in the pan until the bottom is crisped and browned then fold over like an omelette
# Lift on to a warmed dish and serv
