You’ll Need:
# 3 medium potatoes, diced
# 3 medium carrots, scraped and diced
# 3 medium courgettes(zucchinis), diced
# 3 onions, finely chopped
# 2 leeks, sliced
# 3 ripe tomatoes, sliced
# 8oz. bacon, roughly cut
# one and a half teacups of olive oil
# beef stock or a bouillon cube
# salt and pepper
# lemon juice
Directions : # Saut? the onions in the olive oil until they become transparent
# Add the vegetables, bacon and beefstock or bouillon cube and season to taste
# Bring to the boil and cook on a medium heat for about an hour
# Serve the soup warm with dashes of lemon juic
