You’ll Need:
4 tbsp butter
1 onion, chopped
1 carrot, chopped
1 stalk celery, chopped
1/4 cup dry white wine
3-4 pounds bluefish, split and boned
1/4 pound mushrooms, chopped
2 tbsp chopped parsley
Salt
1/8 tsp paprika
Directions : Preheat the oven to 425 F. Heat the butter in a flameproof baking dish large enough to accommodate the fish. Add the onion, carrot, celery, mushrooms, and parsley, and cook, stirring often, for 5 minutes.
Add the wine and cook 4 minutes more. Remove half the vegetables, lay the fish on top. Cover with the remaining vegetables, and sprinkle with salt and paprika.
Cover loosely with foil, and bake 20 minutes
