You’ll Need:
    * 3 T. olive oil
    * 1 each – red, yellow and green peppers – seeded and sliced thin
    * 2 cloves garlic, minced
    * 1 medium zucchini, sliced
    * 1 tsp. dried thyme
    * 10 oz. penne or other hollow pasta
    * 3/4 c. ricotta cheese
    * 3/4 c. plain yogurt
Directions : Sauté the peppers in the oil over medium heat for 3 minutes, add the garlic, zucchini and thyme and sauté another 5 minutes. Cook the pasta in boiling water for 8 minutes, pour in colander and run a bit of cold water over it.
Combine the cheese and yogurt in a blender and process til smooth. Stir the cheese into the pepper mixture and toss with the pasta
